Maple, a Canadian Story
Maple syrup season has begun! Sap from maple trees is collected during the tapping/sugaring season - between February and April. These are the months when temperatures are above freezing during the day and below freezing at night, making the sap flow. The sap flow ends when nighttime temperatures no longer fall below freezing.
To begin the tapping process, Maple trees are carefully chosen based on maturing, health, and best sun exposure. Maple trees in production should be at least 30+ years old before they are tapped. A 40-year-old sugar maple tree will produce about 10 gallons of sap per season.
Holes are drilled at the lower part of the tree trunk. A tap is hammered in the hole and a pail is hung on the tap to collect the syrup as it runs out of the tree. The sap is driven to the sugar shack where it is boiled, filtered, graded, and packed in syrup or dried into sugar.
